Homemade Peppermint Marshmallows

Well I couldn't resist making these treats for my kids to put in their cocoa its tradition around here to make these every year.These are so easy to make and even more fun to eat!
Ingredients:
1)vegetable oil cooking spray
2)2 cups sugar
3)4pkgs unflavored gelatin{1/4 oz each}
4)1 tsp peppermint extract
5)2 large egg whites
6)1tsp red food coloring,1tsp green food coloring
1)coat a 9 by 13 inch baking pan with cooking spray set aside.In a saucepan put sugar, and corn syrup and 3/4 cups water. Cook over medium heat stirring constantly till boiling raise heat to med-high cook for about 15 minutes or till syrup registers 260degrees on a candy thermometer.
2)Meanwhile sprinkle gelatin over 3/4 cup water in a heatproof bowl,let stand to soften 5 minutes.Set the bowl over a pan of simmering water whisking constantly till dissolved.Stir in peppermint extract,set aside.
3)Beat egg whites in a bowl with the whisk attachment until stiff peaks form.Whisk gelatin mixture into sugar mixture with mixer running,gradually add to egg whites.Mix on high speed till very thick 12-15 minutes.
4)Pour mixture into pan working quickly,drop dots of food coloring across surface of marshmallows.Using a toothpick swirl food coloring into marshmallows to get a marbleized look.Let stand at room temp to firm up 3 hours or overnight.Cut into squares.
