Fall Apple Pie Bars

This has been a family and friends favorite in my house for many years now so today I thought I would share the recipe with you.This is a light buttery,flaky crust  filled with a warm Cinnamon apple filling and topped with a apple cider glaze.
Recipe as follows:

Crust:4-Cups of all-purpose flour,1-tsp salt,1tsp baking powder,1-stick of unsalted butter COLD and cut into small cubes, 4-egg yolks,1-Tbls sugar, 10 Tbls COLD water.
Filling: 8-cups of chopped and peeled apples,1/2-Cup of sugar, 1/4 Cup flour,1/2 Tsp cinnamon, 1/8 tsp nutmeg, 1-TBLS vanilla bourbon
Glaze: 1-cup confectioners sugar, 1-TBLS apple cider
Pre-heat oven to 400 degrees, next prepare your apple filling set aside. In a food processor add flour, salt and baking powder give a few pulses then add the butter and pulse till mixture resembles coarse meal then through the feed tube slowly add the egg yolks and water,mixture should not be sticky pulse till mixture just starts to come together. Take it out and cut in half.Wrap each half in plastic wrap and refrigerate for 20 minutes.
Now get a cookie sheet or jelly-roll pan out and set it aside. Roll out each half put one in as the bottom crust then fill with the apple filling. Cover with top crust put some air vents in and brush top with milk then sprinkle with sugar.Turn oven down to 375 and put into oven for 40-50 minutes or till golden brown. Cool for 10 minutes on a rack then mix together your cider glaze and glaze away! Makes about 2 dozen..

Ohh, I have a jelly roll pan that would love to have one made in it. :)

Deidre, pie squares (as our family calls them) is one of our favorites. A recipe handed down by one of my aunts. Have never had them with cider glaze though. YUM! I will be trying that. Thanks for sharing with SYC.
